Ingredients

  • 3 cups cooked chicken, shredded or cubed
  • 12 oz penne or rigatoni pasta
  • 2 cups Alfredo sauce
  • 1 ½ cups shredded mozzarella cheese, divided
  • ½ cup grated parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and black pepper, to taste
  • 2 tbsp fresh parsley, chopped (optional)
  • 1 tbsp olive oil (for greasing)

Optional Add-ins:

  • 1 cup cooked mushrooms
  • 1 cup steamed broccoli
  • ½ cup ricotta or cottage cheese

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with olive oil.
  2. Cook pasta in salted water until just shy of al dente. Drain and set aside.
  3. In a large mixing bowl, combine pasta, chicken, Alfredo sauce, 1 cup mozzarella, parmesan, garlic powder, Italian seasoning, salt, and pepper. Mix well.
  4. Pour mixture into the prepared baking dish. Spread evenly and top with remaining ½ cup mozzarella.
  5. Bake uncovered for 20–25 minutes, until top is golden and bubbly.
  6. Let rest for 5–10 minutes before garnishing with parsley and serving.
