Ingredients
- 2 boneless, skinless chicken breasts
- 8 oz rotini pasta
- 4 cups baby spinach leaves
- 1 cup cherry tomatoes, halved
- ½ cup freshly grated Parmesan cheese
- ¾ cup Caesar dressing
- 1 tablespoon olive oil
- Salt and pepper, to taste
- Optional: Additional Parmesan, cracked black pepper, fresh herbs
Instructions
- Bring a large pot of salted water to a boil. Add pasta and cook until al dente. Drain and rinse with cold water. Set aside.
- Season chicken breasts with salt, pepper, and Italian herbs.
- Heat olive oil in a grill pan or skillet over medium-high heat. Grill chicken 6–7 minutes per side, or until cooked through (internal temp of 165°F). Let rest, then slice.
- In a large mixing bowl, combine spinach and cherry tomatoes. Add cooled pasta and toss gently.
- Drizzle Caesar dressing over the pasta mixture. Toss to coat evenly.
- Top salad with sliced grilled chicken and freshly grated Parmesan.
