Ingredients

  • 2 boneless, skinless chicken breasts
  • 8 oz rotini pasta
  • 4 cups baby spinach leaves
  • 1 cup cherry tomatoes, halved
  • ½ cup freshly grated Parmesan cheese
  • ¾ cup Caesar dressing
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Optional: Additional Parmesan, cracked black pepper, fresh herbs

Instructions

  1. Bring a large pot of salted water to a boil. Add pasta and cook until al dente. Drain and rinse with cold water. Set aside.
  2. Season chicken breasts with salt, pepper, and Italian herbs.
  3. Heat olive oil in a grill pan or skillet over medium-high heat. Grill chicken 6–7 minutes per side, or until cooked through (internal temp of 165°F). Let rest, then slice.
  4. In a large mixing bowl, combine spinach and cherry tomatoes. Add cooled pasta and toss gently.
  5. Drizzle Caesar dressing over the pasta mixture. Toss to coat evenly.
  6. Top salad with sliced grilled chicken and freshly grated Parmesan.
  7. Garnish with extra black pepper or herbs if desired.
  8. Serve immediately or refrigerate for up to 3–4 days (best if dressing is added just before serving).
