2 cups cooked shredded chicken

4 tablespoons butter

1/4 cup all-purpose flour

2 cups chicken broth

1 cup milk

1 1/2 cups all-purpose flour (for biscuit topping)

2 teaspoons baking powder

1/2 teaspoon salt

4 tablespoons cold butter (cubed)

3/4 cup milk (for biscuit dough)

1/2 cup shredded cheddar cheese (optional)

1 tablespoon chopped chives (optional for garnish)

Salt and pepper to taste


Instructions

1. Preheat the oven to 400°F (200°C).

2. In a large oven-safe skillet or Dutch oven, melt butter over medium heat. Stir in the 1/4 cup flour and cook for 1–2 minutes to form a roux.

3. Slowly whisk in chicken broth and milk until smooth. Simmer until thickened.

4. Stir in the cooked shredded chicken and frozen peas. Season with salt and pepper to taste. Remove from heat.

5. In a separate bowl, mix 1 1/2 cups flour, baking powder, and salt. Cut in cold cubed butter until mixture resembles coarse crumbs.

6. Stir in 3/4 cup milk until just combined. Fold in cheddar cheese if using.

7. Drop spoonfuls of biscuit dough over the chicken filling, leaving space between each for expansion.

8. Bake in the preheated oven for 25–30 minutes until biscuits are golden brown and the filling is bubbling.

9. Let the cobbler rest for 5 minutes before serving.

10. Garnish with chopped chives and serve warm.
