Ingredients

2 boneless skinless chicken breasts (thin-sliced)

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup all-purpose flour

2 large eggs (beaten)

1 cup Italian-style breadcrumbs

1/3 cup grated Parmesan cheese

1/3 cup olive oil (or neutral frying oil)

1 cup marinara sauce

1 1/4 cups shredded mozzarella cheese

2 tablespoons chopped fresh parsley or basil (optional)


Instructions

1. Slice and pound chicken breasts to about 1/2 inch thickness if not using thin-sliced. Season with salt and pepper.

2. Prepare three shallow bowls: flour in one, beaten eggs in another, and breadcrumbs mixed with Parmesan in the third.

3. Dredge each piece of chicken in flour, dip in egg, then coat in the breadcrumb-Parmesan mix.

4. Heat olive oil in a skillet over medium heat. Fry chicken for 3–4 minutes per side until golden and crispy. Drain on paper towels.

5. Preheat oven to 425°F (220°C). Place fried chicken in a baking dish. Spoon marinara over each cutlet.

6. Top with shredded mozzarella and bake for 10–12 minutes, or until cheese is melted and bubbly.

7. Optionally, broil for 1–2 minutes to brown the cheese.

8. Garnish with chopped parsley or basil. Serve hot with your favorite sides.

Notes

For extra crispy texture, use a mix of Italian breadcrumbs and panko.

Don’t over-sauce the cutlets — a light layer preserves the crispiness.

Let cheese come to room temperature before baking to ensure even melting.
