Ingredients

2 heads garlic

2 tablespoons olive oil

1 medium yellow onion, chopped

4 sprigs fresh thyme

5 cups vegetable broth

2 large eggs (optional)

4 slices country-style bread

1/2 cup grated Parmesan or Gruyère cheese (optional)


Instructions

1. Peel and slice all garlic cloves from two heads. Cut each clove in half to release flavor.

2. Heat olive oil in a large pot over medium heat. Add garlic and chopped onion. Sauté until soft and translucent, about 5–7 minutes. Avoid browning.

3. Add thyme and bay leaf, then pour in the vegetable broth. Bring to a gentle simmer and cook covered for 25–30 minutes.

4. Optional: Beat 2 eggs and slowly whisk them into the soup to create soft ribbons and enrich the broth.
