3 cloves garlic, minced
1 small yellow onion, finely chopped (optional)
2 tablespoons all-purpose flour
1 cup whole milk
1/2 cup heavy cream
1/2 cup freshly grated Parmesan cheese
1/4 teaspoon ground nutmeg
Salt and freshly ground black pepper to taste
1 lb fresh spinach or 16 oz frozen spinach, thawed and drained
Pinch of crushed red pepper flakes (optional)
Instructions
1. In a large skillet over medium heat, melt the butter. Add the minced garlic and onion, cooking for 2–3 minutes until softened and fragrant.
