Ingredients
3–4 lb chuck roast
1.5 lb baby potatoes
5 large carrots, peeled and cut into chunks
1 large yellow onion, quartered
4 cloves garlic, minced
2 cups low-sodium beef broth
1 tablespoon Worcestershire sauce
2 teaspoons Italian seasoning
Salt, to taste
Black pepper, to taste
2 tablespoons olive oil
Instructions
1. Pat the chuck roast dry and season generously with salt and pepper.
2. Heat olive oil in a skillet over medium-high heat. Sear the roast on all sides until browned.
3. Add onions, carrots, and potatoes to the bottom of the crock pot.
4. Place the seared roast on top of the vegetables.
5. Add minced garlic, Italian seasoning, Worcestershire sauce, and pour in the beef broth around the sides.
6. Cover and cook on LOW for 8–10 hours or HIGH for 5–6 hours, until the meat is fork-tender.
7. Remove roast and vegetables carefully. Shred or slice the roast and serve with cooking juices.
