Ingredients
1 pound boneless skinless chicken breast (cut into bite-sized cubes)
2 tablespoons olive oil
3 tablespoons unsalted butter
4 cloves garlic (minced)
1 teaspoon paprika
1 teaspoon onion powder
1 teaspoon Cajun seasoning (adjust to taste)
Salt and black pepper to taste
Fresh parsley (chopped, for garnish)
8 ounces rotini or penne pasta
2 tablespoons butter
3 cloves garlic (minced)
1 cup heavy cream
0.5 cup chicken broth
1.5 teaspoons Cajun seasoning
0.75 cup freshly grated Parmesan cheese
Salt and pepper to taste
Pinch red pepper flakes (optional)
Instructions
1. Cut chicken into bite-sized pieces and place in a bowl. Toss with olive oil, paprika, onion powder, Cajun seasoning, salt, and pepper. Let it sit while you prep the other ingredients.
2. Bring a large pot of salted water to a boil. Cook the pasta until al dente (about 8–10 minutes), then drain and reserve ½ cup of pasta water.
3. Heat 1 tablespoon of butter in a large skillet over medium-high heat. Add the chicken in a single layer. Cook 3–4 minutes per side until golden and cooked through. Remove and set aside.
4. In the same skillet, reduce heat to medium. Add remaining 2 tablespoons butter and minced garlic. Sauté for 1 minute. Add the chicken back in and toss to coat. Set aside or keep warm.
5. In a separate saucepan, melt 2 tablespoons butter over medium heat. Add garlic and sauté for 30 seconds. Stir in Cajun seasoning, then add broth and heavy cream. Simmer for 3–4 minutes.
6. Reduce heat and whisk in Parmesan cheese until smooth and creamy. Add red pepper flakes if desired. Season to taste.
7. Toss cooked pasta in the sauce until well-coated. Add reserved pasta water if needed to thin the sauce.
8. Plate the pasta and top or serve alongside the garlic butter chicken bites. Garnish with parsley and extra Parmesan.
Notes
Use freshly grated Parmesan for the smoothest, richest Alfredo sauce.
Don’t overcrowd the skillet — searing the chicken in batches gives you that perfect golden crust.
Add a splash of reserved pasta water to loosen and revive the sauce during reheating.
