1.5 pounds boneless skinless chicken breasts

1 tablespoon Cajun seasoning

1 teaspoon salt

0.5 teaspoon black pepper

2 tablespoons olive oil

2 tablespoons butter

4 cloves garlic minced

0.75 cup sun-dried tomatoes chopped

1.25 cups heavy cream

0.75 cup Parmesan cheese grated

1 bunch broccolini trimmed

2 tablespoons chopped fresh parsley


Instructions

1. Cut chicken into bite-sized pieces and season with Cajun seasoning, salt, and pepper.

2. Heat olive oil and 1 tablespoon butter in a large skillet. Sear chicken in batches until golden and cooked through. Remove and set aside.

3. Add the broccolini to the same skillet with a bit more oil if needed. Cook undisturbed for a few minutes until charred, then toss and cook until tender. Remove and set aside.

4. Lower heat and add remaining butter and garlic. Sauté until fragrant, about 30 seconds.

5. Add sun-dried tomatoes and stir, then pour in heavy cream. Simmer gently for 2–3 minutes.

6. Whisk in Parmesan cheese and adjust seasoning with more Cajun spice if desired. Let sauce thicken slightly.

7. Return chicken to the skillet and coat with the sauce. Simmer for another 2–3 minutes.

8. Serve chicken with charred broccolini and garnish with chopped parsley.
