It’s gluten-free, high in protein, and absolutely delicious!

Ingredients

4 salmon fillets

2 tablespoons olive oil

2 tablespoons lime juice

1 teaspoon garlic powder

1 teaspoon salt

1/2 teaspoon black pepper

1 large mango, diced

1/2 cup cucumber, diced

1/4 cup red onion, finely chopped

1 small jalapeño, finely chopped

2 tablespoons chopped fresh cilantro

1 tablespoon lime juice (for salsa)

Instructions

1. Dice mango, cucumber, red onion, and jalapeño. Mix with cilantro and lime juice. Chill in fridge.

2. Pat salmon dry. Brush with olive oil. Season with garlic powder, salt, pepper, and a squeeze of lime juice.

3. Preheat grill to medium-high (around 400°F).

4. Grill salmon skin-side down for 4–5 minutes per side, until opaque and flaky.

5. Rest salmon for 2 minutes. Top with mango salsa and serve with lime wedges.

Notes

Choose a firm-ripe mango to avoid mushy salsa.

Patting the salmon dry ensures a better sear.

Let the salsa chill 10 minutes before serving to deepen the flavor.
