Ingredients

3 large eggs

1/2 cup granulated sugar

1 cup whole milk

1/2 cup all-purpose flour

1 teaspoon vanilla extract

1/4 teaspoon almond extract

Pinch salt

2 tablespoons unsalted butter

1 cup fresh blackberries

Powdered sugar (for dusting)

Instructions

1. Preheat oven to 350°F (175°C). Grease an 8–9 inch pie dish or skillet with butter and coat it with a light layer of sugar.

2. In a bowl, whisk together eggs and sugar until slightly frothy and pale.

3. Add milk, vanilla, almond extract (optional), and salt. Sift in the flour gradually while whisking to prevent lumps.

4. Arrange blackberries evenly in the prepared dish. Gently pour batter over the fruit.

5. Bake for 35–40 minutes, or until the edges are golden and the center is set.

6. Let cool for at least 10–15 minutes before serving. Dust with powdered sugar.

Notes

Use room temperature ingredients for a smoother batter and even baking.

Lightly sugaring the baking dish helps create a subtle crust.

Allow to cool before serving for easier slicing and better texture.
