  • Yield: 4 servings

Description

A bold and spicy stir-fry featuring tender chicken breast, vibrant bell peppers, crunchy broccoli, and aromatic garlic-ginger sauce. Quick, flavorful, and perfect for weeknight dinners.

Ingredients

  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 1 tbsp cornstarch
  • 1 tbsp soy sauce (for marinating)
  • 2 tbsp vegetable oil
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 cup broccoli florets
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp soy sauce (for sauce)
  • 1 tbsp oyster sauce
  • 1 tbsp rice vinegar
  • 12 tsp chili paste or crushed red pepper (to taste)
  • 1/4 cup water
  • 1 tsp sesame oil

Instructions

  1. In a bowl, mix chicken with cornstarch, 1 tbsp soy sauce, and a splash of water. Let marinate for 10 minutes.
  2. In a small bowl, whisk together sauce ingredients: 2 tbsp soy sauce, oyster sauce, rice vinegar, chili paste, garlic, ginger, and 1/4 cup water.
  3. Heat 1 tbsp oil in a large skillet or wok over medium-high heat. Cook chicken until golden and cooked through (about 5–6 minutes). Remove and set aside.
  4. Add remaining oil to pan. Stir-fry onion, bell peppers, and broccoli for 4–5 minutes until tender-crisp.
  5. Return chicken to the pan. Pour in the sauce. Stir and cook for 2–3 minutes until the sauce thickens.
  6. Finish with a drizzle of sesame oil. Serve hot over rice or noodles.
