1 teaspoon sugar
1 large egg
3/4 cup buttermilk
1/4 cup finely chopped onion
Oil for frying
Instructions

2. Create a well in the center and add egg and buttermilk. Stir just until combined.
3. Fold in the chopped onions evenly throughout the batter.
4. Heat 2 inches of oil in a deep skillet or pot to 350°F (175°C).
5. Drop spoonfuls or scoops of batter into the oil, frying in small batches.
6. Cook for 2–3 minutes per side, until golden brown.
7. Remove using a slotted spoon and drain on paper towels.
8. Serve warm and enjoy!
Notes
Let the batter rest for 5 minutes before frying for better puff and texture.
Keep oil at a steady 350°F to prevent greasy or undercooked centers.
Avoid overmixing the batter to keep the inside light and fluffy.
