Ingredients
12 lasagna noodles (or enough for 3 layers)
1 tablespoon olive oil
1 pound ground beef
1 medium yellow onion, finely chopped
3 cloves garlic, minced
1 can (28 ounces) crushed tomatoes
2 tablespoons tomato paste
1 tablespoon Italian seasoning
1 teaspoon salt
1 teaspoon black pepper
15 ounces ricotta cheese
1 large egg
2 tablespoons chopped fresh parsley
3 cups shredded mozzarella cheese
1 cup grated Parmesan cheese
Instructions
1. Heat olive oil in a large skillet over medium heat. Sauté the onion until translucent, about 3–4 minutes. Add garlic and cook another 30 seconds.
2. Add ground beef and cook until browned, breaking it apart with a spoon. Drain excess fat if needed.
3. Stir in crushed tomatoes, tomato paste, Italian seasoning, salt, and pepper. Simmer on low heat for 20 minutes.
4. In a bowl, mix ricotta cheese with egg, parsley, salt, and pepper until combined.
5. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
6. Spread a layer of meat sauce on the bottom of the dish. Add a layer of noodles, then spread a third of the ricotta mixture, meat sauce, and mozzarella. Repeat two more times.
7. Top with final layer of noodles, remaining meat sauce, mozzarella, and Parmesan cheese.
8. Cover with foil (sprayed to prevent sticking) and bake for 25 minutes.
9. Remove foil and bake uncovered for 20 minutes until golden and bubbling.
10. Let the lasagna rest for 10–15 minutes before slicing and serving.
Notes
Let the lasagna rest before cutting to keep the layers intact.
For extra richness, add a layer of béchamel or mascarpone between the pasta sheets.
You can prepare it up to a day ahead and refrigerate before baking.
