Easy Khachapuri is a simplified version of the iconic Georgian cheese bread, shaped like a boat and filled with a luscious mix of cheeses and topped with a perfectly baked egg. This comforting dish is quick to make, incredibly satisfying, and customizable to your taste.
Ingredients
- 2 cups all-purpose flour
- 1/2 cup warm water
- 1 tsp instant yeast
- 1/2 tsp sugar
- 1/2 tsp salt
- 1 tbsp olive oil
- 1 cup shredded mozzarella cheese
- 1/2 cup crumbled feta cheese
- 1/3 cup ricotta or cream cheese
- 2 eggs (plus more if making multiple boats)
Instructions
- In a bowl, combine warm water, yeast, sugar, and olive oil. Let sit 5–10 minutes until foamy.
- Stir in salt and flour gradually until a soft dough forms. Knead 5–7 minutes until smooth.
- Cover and let rise 1 hour in a warm place until doubled.
- Mix mozzarella, feta, and ricotta in a separate bowl.
- Preheat oven to 450°F (230°C). Line a baking sheet with parchment.
- Divide dough in half. Roll each into an oval. Roll sides inward and pinch ends to shape like a boat.
- Fill centers with cheese mixture. Bake 12–14 minutes until crust is golden and cheese is bubbling.
- Crack an egg into the center. Bake 3–5 more minutes until the white sets but yolk stays soft.
- Remove, brush crust with butter if desired, and serve immediately.
