Ingredients

For the Macaron Shells:

  • 100g egg whites (aged, room temperature)
  • 100g granulated sugar
  • 100g almond flour (finely ground, blanched)
  • 100g powdered sugar
  • Gel food coloring (optional)

For Vanilla Buttercream Filling:

  • 113g unsalted butter (softened)
  • 180g powdered sugar
  • 1 tsp vanilla extract
  • 12 tbsp heavy cream or milk

Instructions

  1. Sift together almond flour and powdered sugar into a bowl. Discard any coarse bits.
  2. In a clean bowl, beat egg whites until foamy, then gradually add granulated sugar. Whip until stiff, glossy peaks form. Add food coloring if desired.
  3. Fold the sifted dry ingredients into the meringue in three additions. Mix gently until the batter flows like lava.
  4. Transfer batter to a piping bag with a round tip and pipe small circles onto a lined baking sheet.
  5. Tap the baking sheet to release air bubbles. Use a toothpick to pop any visible bubbles.
  6. Let the shells rest for 30–60 minutes until a skin forms.
  7. Preheat oven to 300°F (150°C). Bake for 14–16 minutes. Let cool completely.
  8. Beat softened butter, powdered sugar, vanilla, and cream until smooth to make the filling.
  9. Pipe filling onto half of the shells and top with matching halves.
  10. Optionally, refrigerate for 24 hours to mature before serving.
