Ingredients

For the Chicken:

  • 2 large chicken breasts, halved horizontally or pounded evenly
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • 2 tbsp olive oil

For the Sauce:

  • 34 garlic cloves, minced
  • 1/2 cup sun-dried tomatoes, chopped (oil-packed, drained)
  • 1 tsp red pepper flakes (optional)
  • 3/4 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp onion powder
  • Fresh basil, for garnish
  • Salt and pepper, to taste

For the Pasta:

  • 1012 oz penne or short pasta
  • Salt, for boiling water

Instructions

  1. Season chicken with garlic powder, Italian seasoning, salt, and pepper.
  2. In a large skillet over medium-high heat, add olive oil and sear chicken for 4–5 minutes per side until cooked through. Remove and slice.
  3. Cook pasta in salted boiling water until al dente. Reserve 1 cup pasta water, then drain.
  4. In the same skillet, sauté garlic for 30 seconds. Add sun-dried tomatoes and red pepper flakes, cook for another minute.
  5. Pour in chicken broth, deglaze pan, and simmer 2 minutes. Stir in heavy cream, onion powder, salt, and pepper. Simmer for 4–5 minutes.
  6. Stir in Parmesan until melted and smooth. Add sliced chicken back to skillet.
  7. Toss cooked pasta into sauce. Add reserved pasta water as needed to loosen sauce.
  8. Garnish with fresh basil and additional Parmesan. Serve hot.
