Ingredients
For the Chicken:
- 2 large chicken breasts, halved horizontally or pounded evenly
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- Salt and pepper, to taste
- 2 tbsp olive oil
For the Sauce:
- 3–4 garlic cloves, minced
- 1/2 cup sun-dried tomatoes, chopped (oil-packed, drained)
- 1 tsp red pepper flakes (optional)
- 3/4 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 tsp onion powder
- Fresh basil, for garnish
- Salt and pepper, to taste
For the Pasta:
- 10–12 oz penne or short pasta
- Salt, for boiling water
Instructions
- Season chicken with garlic powder, Italian seasoning, salt, and pepper.
- In a large skillet over medium-high heat, add olive oil and sear chicken for 4–5 minutes per side until cooked through. Remove and slice.
- Cook pasta in salted boiling water until al dente. Reserve 1 cup pasta water, then drain.
- In the same skillet, sauté garlic for 30 seconds. Add sun-dried tomatoes and red pepper flakes, cook for another minute.
- Pour in chicken broth, deglaze pan, and simmer 2 minutes. Stir in heavy cream, onion powder, salt, and pepper. Simmer for 4–5 minutes.
- Stir in Parmesan until melted and smooth. Add sliced chicken back to skillet.
- Toss cooked pasta into sauce. Add reserved pasta water as needed to loosen sauce.
- Garnish with fresh basil and additional Parmesan. Serve hot.
