Ingredients

1 pound ground beef

12 ounces orecchiette pasta

1/2 cup sun-dried tomatoes, chopped

2 cups fresh spinach

1 small onion, diced

3 cloves garlic, minced

2 cups beef broth

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1/4 teaspoon red pepper flakes (optional)

Salt, to taste

Black pepper, to taste


Instructions

1. Brown the ground beef in a large skillet over medium heat until fully cooked and slightly crispy on the edges. Drain excess grease.

2. Add diced onion and minced garlic. Sauté for 3–4 minutes until softened.

3. Stir in sun-dried tomatoes, Italian seasoning, salt, pepper, and red pepper flakes. Cook for another 2 minutes.

4. Pour in beef broth and scrape the skillet bottom to deglaze. Bring to a simmer.

5. Add uncooked orecchiette pasta. Stir, cover, and cook for 12–15 minutes, stirring occasionally.

6. Reduce heat to low. Stir in heavy cream and Parmesan cheese. Let the sauce thicken for 2–3 minutes.

7. Add fresh spinach and stir until wilted.

8. Serve hot with fresh herbs or more Parmesan if desired.

Notes

For best results, use freshly grated Parmesan instead of pre-shredded.

Don’t skip stirring the pasta while it simmers to avoid clumping.

To reheat, add a splash of cream or broth for that just-made texture.
