Ingredients
1 lb ground beef and pork mix
1/2 cup breadcrumbs
1 large egg
2 cloves garlic, minced
1/4 cup onion, finely chopped
1/2 tsp salt
1/4 tsp black pepper
2 tbsp fresh parsley, chopped (optional)
1 cup cranberry sauce
1 tbsp balsamic vinegar
1 tbsp brown sugar or honey (optional)
20–24 mini skewers or toothpicks
Instructions
1. In a large bowl, mix ground meat, breadcrumbs, egg, garlic, onion, salt, pepper, and parsley until just combined.
2. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
3. Roll the mixture into 1-inch balls and arrange on the sheet.
4. Bake for 15–18 minutes until cooked through and golden.
5. In a saucepan, stir together cranberry sauce, balsamic vinegar, and optional sweetener over medium heat until smooth.
6. Once meatballs are baked, toss them gently in the warm glaze.
7. Skewer each glazed meatball with a toothpick or mini skewer.
8. Optionally garnish with extra parsley or rosemary and serve.
Notes
For even cooking, use a small scoop to portion the meatballs.
You can make and bake the meatballs a day ahead, then glaze and serve fresh.
If the cranberry glaze gets too thick, add a splash of water to loosen it.
