Ingredients
2 cups pancake mix
1 pound breakfast sausage, cooked and crumbled
1 1/2 cups shredded cheddar cheese
1/4 cup milk (optional, as needed)
Maple syrup for dipping (optional)
Instructions
1. Cook the sausage in a skillet over medium heat, crumbling it into small pieces. Drain excess grease and set aside to cool slightly.
2. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
3. In a large bowl, combine pancake mix, cooked sausage, and shredded cheese. Mix well.
4. If mixture is too dry or crumbly, gradually stir in milk one tablespoon at a time until it holds together.
5. Use a spoon or cookie scoop to form 1 to 1.5-inch balls. Roll lightly and place on prepared baking sheet.
6. Bake for 20–25 minutes or until golden brown and cooked through.
7. Serve warm with maple syrup or dipping sauce of choice.
Notes
You can swap cheddar for pepper jack or mozzarella to change up the flavor.
Make sure your sausage is fully cooked before mixing to ensure safety and texture.
Freeze after baking and reheat in the oven for best results.
