Ingredients
1/2 lb ground beef (80/20)
1 medium yellow onion, sliced
4 slices Swiss cheese
4 slices rye bread
2 tbsp butter, softened
1/2 tsp salt
1/4 tsp black pepper
1 tsp Worcestershire sauce (optional)
Instructions
1. Slice the onion and cook over medium-low heat in a skillet with a bit of butter or oil. Stir occasionally and caramelize for 20–25 minutes until golden and soft.
2. Divide ground beef into 2 oval patties slightly larger than the bread. Season with salt, pepper, and Worcestershire (if using).
3. Cook patties in a skillet over medium-high heat, about 3–4 minutes per side. Set aside.
4. Butter one side of each bread slice. Layer: bread (butter side out), cheese, patty, onions, cheese, then another bread slice.
5. Grill assembled sandwiches in the skillet over medium heat. Press lightly and cook 2–3 minutes per side until crispy and golden brown.
6. Let rest 1 minute before slicing and serving.
Notes
Let the cheese come to room temperature before assembling for better melting.
Use cast iron for the best crisp and even browning.
Don’t rush the onions — low and slow cooking makes them sweet and rich.
