Ingredients
- 2 cups cooked, shredded chicken
- 1 sheet puff pastry (store-bought or homemade)
- 1/2 cup carrots, chopped
- 1/2 cup peas
- 1/2 cup corn
- 1/2 cup heavy cream
- 1/2 cup chicken broth
- 3 tablespoons butter
- 3 tablespoons flour
- 1 teaspoon garlic powder
- 1 teaspoon thyme
- Salt and pepper, to taste
Instructions
- Preheat the oven to 375°F (190°C). Cook the chicken if necessary, then shred it into bite-sized pieces.
- In a large pan, melt the butter and add chopped carrots, cooking for about 5 minutes until softened. Add peas and corn and cook for an additional 3 minutes.
- Sprinkle flour into the vegetables and cook for 1 minute to make the roux.
- Slowly pour in the chicken broth and heavy cream, stirring continuously to create a creamy sauce.
- Add the shredded chicken, garlic powder, thyme, salt, and pepper. Stir until well combined and the sauce has thickened.
- Roll out the puff pastry on a flat surface and lightly grease a pie dish.
- Pour the filling into the pie dish and cover with the puff pastry, trimming and pressing the edges to seal.
- Cut slits in the top to let steam escape. Brush the pastry with a beaten egg or milk for a golden finish.
- Bake in the oven for 30-35 minutes, or until the pastry is golden and the filling is bubbling.
- Let the pie cool for 5-10 minutes before serving.
