Ingredients

1 lb large shrimp, peeled and deveined

8 oz linguine

4 tbsp unsalted butter

2 tbsp olive oil

4 cloves garlic, minced

1/3 cup dry white wine (Pinot Grigio or Sauvignon Blanc)

2 tbsp fresh lemon juice

1/2 tsp red pepper flakes

2 tbsp fresh parsley, chopped

Salt, to taste

Black pepper, to taste


Instructions

1. Bring a pot of salted water to a boil. Cook linguine until al dente, drain, and set aside. Reserve 1/2 cup of pasta water.

2. Pat shrimp dry and season with salt and pepper.

3. In a large skillet, heat olive oil and 2 tbsp butter. Cook shrimp 1–2 minutes per side until just opaque. Remove and set aside.

4. In the same skillet, add remaining butter and garlic. Sauté until fragrant, about 1 minute.

5. Add white wine and simmer 2–3 minutes until slightly reduced. Stir in lemon juice and red pepper flakes.

6. Return shrimp to pan. Add cooked pasta and toss to coat in the sauce. Add pasta water if needed.

7. Season to taste with salt and pepper.

8. Garnish with fresh parsley and serve hot.

Notes

Always use fresh garlic for best flavor.

Don’t overcook the shrimp — once they’re pink and curled, they’re done.

If avoiding alcohol, replace white wine with chicken broth and a splash of lemon juice.
