Ingredients
1 lb ground Italian sausage
10 cups day-old bread, cut into 1-inch cubes
2 tablespoons olive oil or unsalted butter
1 medium onion, diced
2 celery stalks, chopped
2 apples, peeled and diced
2 cloves garlic, minced
2 teaspoons fresh rosemary, finely chopped
1 teaspoon fresh thyme leaves
1 tablespoon fresh sage, chopped
2 1/2 cups chicken or vegetable broth
2 large eggs
Salt and black pepper to taste
Chopped parsley for garnish (optional)
Instructions
1. Spread the bread cubes on a baking sheet and toast at 300°F (150°C) for 15–20 minutes until slightly crisp.
2. In a skillet, cook sausage over medium heat until browned. Set aside.
3. In the same skillet, add olive oil or butter and sauté onion and celery until soft.
4. Add garlic and cook for 1 minute, then stir in apples. Cook 2–3 minutes.
5. In a large bowl, combine toasted bread, sausage, and the sautéed mix.
6. Add herbs and season with salt and pepper.
7. Whisk together broth and eggs, then pour over the mixture. Toss gently.
8. Transfer to a greased 9×13-inch baking dish.
9. Bake at 375°F (190°C) uncovered for 35–40 minutes or cover for a softer texture.
10. Let rest 5–10 minutes before serving. Garnish with parsley if desired.
Notes
Use day-old or toasted bread to prevent sogginess.
Fresh herbs bring the best flavor, but dried work in a pinch (use less).
To make ahead, prep the stuffing and refrigerate overnight; bake before serving.
