1.5 to 2 pounds boneless, skinless chicken breasts

15 oz can black beans, drained and rinsed

15 oz can corn, drained

10 oz can diced tomatoes with green chilies

10.5 oz can cream of chicken soup

1 cup chicken broth

0.5 cup heavy cream

1 cup shredded cheddar cheese

1 teaspoon chili powder

0.5 teaspoon cumin

0.5 teaspoon onion powder

0.5 teaspoon garlic powder

Salt and pepper to taste

Diced avocado

Shredded cheddar cheese

Fresh cilantro

Crunchy tortilla strips or crushed tortilla chips

Instructions

1. Place chicken breasts in the slow cooker and add black beans, corn, diced tomatoes with green chilies, and cream of chicken soup.

2. Sprinkle in chili powder, cumin, garlic powder, onion powder, salt, and pepper. Pour in chicken broth.

3. Cover and cook on low for 6–7 hours or high for 3–4 hours.

4. Remove the chicken, shred it using two forks, and return it to the slow cooker.

5. Stir in the heavy cream and shredded cheddar cheese. Cook for another 15–20 minutes on low, uncovered, until the soup is creamy.
