Ingredients
1 pound ground beef
1 1/2 cups chopped bell peppers (mix of red, green, yellow)

3 cloves garlic, minced
2 cups cooked rice
1 can (15 oz) tomato sauce
1 can (14.5 oz) diced tomatoes, drained
1 1/2 teaspoons Italian seasoning
1 teaspoon salt
1/2 teaspoon black pepper
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
2 tablespoons chopped fresh parsley (optional)
Instructions
1. Preheat oven to 375°F (190°C).
2. In a large oven-safe skillet, heat oil over medium heat. Add diced onion and chopped bell peppers. Sauté for 5–7 minutes until softened.
3. Stir in minced garlic and cook for 1 minute more until fragrant.
4. Add ground beef and cook until browned, breaking it apart as it cooks.
5. Once browned, stir in tomato sauce, diced tomatoes, Italian seasoning, salt, and pepper. Let simmer for 5 minutes.
