Loaded with juicy mango, crunchy cucumber, red onion, and zesty lime juice, it’s a tropical, easy recipe that’s perfect for barbecues, taco nights, or anytime you want something bright and refreshing. Whether you’re looking for food ideas that are light yet flavorful, or just want something new to dip your chips into—this mango salsa delivers.

Ingredients

2 ripe mangoes, peeled and diced

0.5 medium red onion, finely chopped

0.5 English cucumber, diced

1 small jalapeño, seeds removed and minced (optional)

0.25 cup fresh cilantro, chopped

2 tablespoons lime juice (juice of 1 lime)

0.25 teaspoon salt

Black pepper, to taste

Instructions

1. Peel and dice the mangoes into small, even cubes.

2. Finely chop the red onion, cucumber, and jalapeño.

3. Combine mango, onion, cucumber, and jalapeño in a mixing bowl.

4. Add chopped cilantro to the bowl and gently toss all ingredients together.

5. Squeeze in fresh lime juice and season with salt and black pepper.

6. Toss again to evenly distribute flavors.

7. Let the salsa rest for 10–15 minutes for best flavor.

8. Serve chilled with chips, tacos, or your favorite grilled protein.

Notes

Use mangoes that are ripe but still firm to prevent a mushy salsa.

For a mild flavor, soak the chopped red onion in water for 10 minutes before adding.

Let the salsa sit before serving so the flavors can meld beautifully.
