Ingredients

2 boneless skinless chicken breasts

2 tablespoons soy sauce

2 tablespoons sweet chili sauce

1 tablespoon honey

1 tablespoon sesame oil

1 teaspoon garlic powder

0.5 teaspoon crushed red pepper flakes

0.5 lime juiced

0.25 cup mayonnaise or Greek yogurt

2 tablespoons sweet chili sauce

1 teaspoon sriracha

1 teaspoon lime juice

2 cups cooked jasmine rice

Fresh chopped cilantro

Lime wedges

Extra sweet chili sauce (optional)


Instructions

1. In a mixing bowl, combine soy sauce, sweet chili sauce, honey, sesame oil, garlic powder, red pepper flakes, and lime juice. Add chicken and toss well. Marinate for at least 15–30 minutes.

2. Cook jasmine rice according to package instructions. Fluff and set aside.

3. In a small bowl, whisk together mayo or Greek yogurt, sweet chili sauce, sriracha, and lime juice until smooth. Set aside.

4. Heat a grill pan or cast iron skillet over medium-high. Grease lightly. Cook chicken 5–6 minutes per side until fully cooked and charred. Rest for 5 minutes.

5. Slice the rested chicken. Assemble bowls with rice on the bottom, then chicken slices.

6. Drizzle with creamy chili sauce and garnish with cilantro and lime wedges. Add extra sweet chili sauce if desired.

Notes

Use tamari or coconut aminos for a gluten-free version.
