1 lb ground beef (85/15 lean recommended)
1 small onion, diced
2 cloves garlic, minced
1 packet taco seasoning (or 2 tablespoons homemade blend)
1 teaspoon ground cumin
1/2 teaspoon smoked paprika
1 (15 oz) can black beans, drained and rinsed
1 (15 oz) can kidney beans, drained and rinsed
1 (15 oz) can corn, drained
1 (10 oz) can diced tomatoes with green chilies
1 (15 oz) can diced tomatoes
1 (8 oz) can tomato sauce
1 cup beef broth
Salt and pepper, to taste
Shredded cheddar cheese (optional topping)
Sour cream (optional topping)
Chopped cilantro (optional topping)
Jalapeño slices (optional topping)
Crushed tortilla chips (optional topping)
Instructions
1. In a large pot, brown the ground beef and diced onion over medium-high heat until fully cooked and the onion is soft.
2. Stir in minced garlic, taco seasoning, cumin, and smoked paprika. Cook for 1–2 minutes to let the spices bloom.
3. Add in black beans, kidney beans, corn, diced tomatoes, tomato sauce, and beef broth. Stir to combine.
4. Bring soup to a boil, then reduce to a simmer and cook uncovered for 20–25 minutes.
5. Taste the soup and adjust salt, pepper, or broth if needed.
