Ingredients
2 cups eggnog
1 cup heavy cream
1/4 cup granulated sugar (optional)
2 1/4 teaspoons unflavored powdered gelatin
3 tablespoons cold water
1/2 teaspoon pure vanilla extract
1/4 teaspoon ground nutmeg
1 pinch salt
Optional toppings: whipped cream, caramel sauce, crushed gingersnaps, cinnamon sticks, star anise
Instructions
1. In a small bowl sprinkle gelatin over cold water and allow it to bloom for 5 to 10 minutes.
2. In a saucepan combine eggnog, heavy cream, sugar, vanilla, nutmeg, and salt over medium low heat.
3. Warm gently while stirring for about 5 to 7 minutes without letting it boil.
4. Remove from heat and whisk in the bloomed gelatin until completely dissolved.
5. Strain the mixture through a fine mesh sieve into a pouring bowl.
6. Divide evenly into ramekins or dessert glasses.
7. Tap lightly to remove air bubbles and cover loosely.
8. Refrigerate for at least 4 hours or overnight until set.
9. To unmold dip ramekins briefly in warm water and invert onto serving plates.
10. Garnish with whipped cream, caramel drizzle, and a sprinkle of nutmeg.
Notes
Use full fat eggnog and cream for the creamiest texture.
Lightly grease molds if you plan to unmold the panna cotta.
Taste the eggnog before adding sugar because some brands are already very sweet.
