Ingredients

2 blocks (8 oz each) cream cheese, softened

1/2 cup chopped green olives

1/2 cup chopped black olives

1/2 cup chopped roasted red peppers

1/3 cup chopped marinated artichoke hearts

1/4 cup chopped fresh parsley

1/4 cup diced sharp cheddar or mozzarella cheese

1 garlic clove, minced

Fresh rosemary sprigs (for garnish)

1/4 cup fresh cranberries (optional, for garnish)


Instructions

1. Let the cream cheese soften at room temperature for 30–45 minutes.

2. While it softens, chop all mix-ins into small, even pieces.

3. In a large bowl, stir the cream cheese until smooth.

4. Fold in the olives, roasted peppers, artichokes, cheese, garlic, and parsley.

5. Spoon the mixture onto a large sheet of plastic wrap and shape into a log.

6. Wrap tightly and twist the ends. Chill for at least 2 hours or overnight.

7. Once firm, unwrap and place on a serving board.

8. Garnish with rosemary, extra olives, peppers, and optional cranberries.

9. Serve with crackers, crostini, or veggies and enjoy!

Notes

Be sure to drain your antipasto ingredients well—excess moisture can make the log too soft.
