Ingredients
1 pound chicken thighs, boneless skinless
3 tablespoons soy sauce
2 tablespoons chili paste or gochujang
6 cloves garlic, minced
1 tablespoon sesame oil
1 teaspoon salt
1 teaspoon black pepper
1 whole garlic bulb, for roasting
1 tablespoon butter
2 cups chicken stock
1 cup heavy cream
2 packs ramen noodles
3 green onions, chopped
1 tablespoon chili oil (optional)
Instructions
1. In a bowl, mix soy sauce, chili paste, minced garlic, sesame oil, salt, and pepper. Coat the chicken thighs in the marinade and let sit for at least 30 minutes.
2. While the chicken marinates, preheat the oven to 400°F (200°C). Wrap a whole garlic bulb in foil and roast for 30–35 minutes until soft and golden.
3. Heat a skillet over medium-high heat and cook the marinated chicken thighs for 6–7 minutes per side until charred and fully cooked. Let rest and slice into strips.
4. In a pot, melt butter and sauté 1 clove of minced garlic. Add the roasted garlic paste, chicken stock, and soy sauce. Let simmer for 3–4 minutes.
5. Stir in the heavy cream and continue cooking over low heat until the broth thickens slightly. Do not boil.
6. Boil ramen noodles according to package instructions, then drain and set aside.
