Ingredients
2 cups corn (fresh, frozen, or canned)
1 large avocado, diced
1/3 cup red onion, finely diced
1/4 cup fresh cilantro, chopped
1 small red chili or jalapeño, sliced (optional)
2 tablespoons fresh lime juice
1 tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. Prepare the corn: boil fresh corn for 3–5 minutes and cut kernels off the cob, or thaw and drain frozen/canned corn.
2. Dice the avocado into bite-sized cubes.
3. Finely chop the red onion and cilantro. Slice chili if using.
4. Whisk together lime juice, olive oil, salt, and pepper in a small bowl.
5. Combine corn, avocado, onion, cilantro, and chili in a large bowl.
6. Drizzle the dressing over and toss gently to combine.
7. Serve immediately for best freshness.
Notes
Add avocado just before serving to avoid browning.
Char your corn lightly for extra smoky flavor.
You can make the dressing a day ahead and store separately.
