Ingredients
2 cups all-purpose flour

0.5 cup unsalted butter softened
1 cup granulated sugar
2 large eggs room temperature
1 teaspoon pure vanilla extract
0.5 cup buttermilk
0.25 cup whole milk
0.5 cup unsalted butter softened
1.25 cups powdered sugar sifted
1 teaspoon vanilla extract
0.5 teaspoon lemon zest optional
0.33 cup marshmallow fluff or whipped cream cheese
2 tablespoons heavy cream
0.25 cup fruit preserves or jam (peach, strawberry, or mango)

Instructions
1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
2. In a medium bowl, whisk together flour, baking soda, baking powder, and salt.
3. In a large mixing bowl, cream the butter and sugar until light and fluffy.
4. Beat in eggs one at a time, then add vanilla extract.
5. Alternately add the dry ingredients and combined buttermilk and milk to the butter mixture. Mix until just combined.
6. Use a cookie scoop to drop batter onto lined baking sheets. Space them 2 inches apart.
7. Bake for 10–12 minutes or until tops spring back when touched.
8. Transfer to a wire rack and let cool completely.
9. For the filling, beat butter until smooth, then gradually add powdered sugar, vanilla, lemon zest, and fluff or cream cheese.
10. Add cream a little at a time until fluffy.
11. Stir in the fruit preserves or swirl in gently for visual appeal.
12. Pair cookies by size and fill the flat side of one, sandwich with another. Add sprinkles if desired.
