Ingredients

1 cup long grain white rice (uncooked)

1 can (10.5 oz) cream of chicken soup

1 can (10.5 oz) cream of mushroom soup

1 ½ cups water

4 boneless, skinless chicken breasts

1 packet onion soup mix

1 tablespoon butter (optional)

½ teaspoon garlic powder or paprika (optional)

Chopped parsley (for garnish, optional)


Instructions

1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch glass or ceramic baking dish.

2. In a mixing bowl, stir together the rice, cream of chicken soup, cream of mushroom soup, and water until smooth.

3. Pour the rice mixture into the prepared baking dish, spreading it evenly.

4. Place the chicken breasts on top of the rice mixture.

5. Sprinkle the packet of onion soup mix evenly over the chicken.

6. Optionally, add dabs of butter and sprinkle with garlic powder or paprika for added flavor.

7. Cover the dish tightly with aluminum foil.

8. Bake for 1 hour and 15 minutes without removing the foil.

9. Uncover, check that the chicken is cooked through (internal temp should be 165°F), and optionally broil for 2–3 minutes to brown the top.

10. Let rest for 5–10 minutes before serving. Garnish with chopped parsley if desired.

Notes

Be sure to use uncooked long grain white rice — not instant or minute rice.

Keep the dish tightly covered while baking to ensure the rice cooks evenly and the chicken stays moist.

You can swap cream of mushroom soup for cream of celery or cream of onion based on your preference.
