Ingredients

3 pounds beef chuck roast

2 tablespoons olive oil

1 teaspoon salt

1 teaspoon ground black pepper

1 large yellow onion sliced

4 cloves garlic minced

2 tablespoons tomato paste

1 teaspoon dried thyme

1 teaspoon dried rosemary

2 bay leaves

3 cups low-sodium beef broth

1 tablespoon Worcestershire sauce

2 tablespoons all-purpose flour or cornstarch

2 tablespoons unsalted butter

1 cup chopped carrots (optional)

1 tablespoon balsamic vinegar (optional)

2 tablespoons chopped parsley for garnish


Instructions

1. Pat the beef dry with paper towels and season with salt and pepper.

2. Heat olive oil in a Dutch oven over medium-high heat and sear the beef for 3–4 minutes per side until browned. Remove and set aside.

3. In the same pot, sauté sliced onions for 5–6 minutes until softened. Add garlic and tomato paste; cook for 1–2 minutes.

4. Add thyme, rosemary, and bay leaves. Deglaze with a splash of broth, scraping up browned bits.

5. Return beef to the pot. Add broth, Worcestershire sauce, carrots, and balsamic vinegar. Simmer lightly.

6. Cover and cook at 300°F in the oven for 4 hours or use a slow cooker on low for 8 hours.

7. Once tender, remove the beef and tent with foil. Strain if preferred.

8. Make a slurry with flour or cornstarch and water, whisk into simmering liquid until thickened.

9. Stir in butter for a richer finish.

10. Slice or shred beef, top with gravy, garnish with parsley, and serve.
