Ingredients

34 lbs beef chuck roast

1 large onion, sliced

4 garlic cloves, minced

1 cup beef broth

2 tbsp tomato paste

1 tbsp Worcestershire sauce

1 tbsp balsamic vinegar

1 tsp soy sauce

1 tsp smoked paprika

1 tsp ground cumin

1/2 tsp black pepper

1 tsp salt

1/2 tsp crushed red pepper flakes (optional)

2 tbsp olive oil (optional, for searing)

Fresh parsley or cilantro, chopped (for garnish)


Instructions

1. Trim excess fat from the chuck roast. Season with salt and pepper. Optional: sear the meat in a skillet with olive oil until browned on all sides.

2. Slice onion and mince garlic. Place them at the bottom of the slow cooker.

3. In a bowl, mix beef broth, tomato paste, Worcestershire sauce, balsamic vinegar, soy sauce, paprika, cumin, black pepper, and red pepper flakes.

4. Place beef in the slow cooker over the onions and garlic. Pour the sauce mixture over the top.

5. Cover and cook on LOW for 8–10 hours or on HIGH for 4–6 hours, until beef is fork-tender.

6. Shred the beef with two forks inside the cooker. Mix it well with the cooking juices.

7. Let sit on warm for 10–15 minutes, then garnish with fresh herbs and serve.

Notes

Searing the meat first boosts the overall flavor, but it’s optional for busy days.

This beef improves with time—leftovers taste even better the next day.
