Ingredients
8 slices white sandwich bread
4 oz cream cheese, softened
2 tbsp powdered sugar
1/2 tsp vanilla extract
1/2 cup strawberry jam
2 tbsp unsalted butter, softened or melted
Optional: fresh strawberries, sliced
Instructions
1. In a mixing bowl, combine softened cream cheese, powdered sugar, and vanilla extract. Whip until smooth and fluffy.
2. Lay out the bread slices. Spread cheesecake filling on four slices and strawberry jam on the other four. Press together to form sandwiches.
3. Lightly butter the outsides of all sandwiches.
4. Heat a nonstick skillet or griddle over medium-low heat. Fry sandwiches 2–3 minutes per side until golden brown and filling is warmed.
5. Transfer to plate, rest 1 minute, dust with powdered sugar, and slice in half. Serve warm.
