Ingredients

1 lb ground beef

1 small yellow onion, finely chopped

3 garlic cloves, minced (divided)

1 1/2 cups shredded cheddar cheese

8 medium flour tortillas

4 tbsp unsalted butter

1/4 tsp salt

1/4 tsp black pepper

2 tbsp chopped fresh parsley (optional)


Instructions

1. In a skillet over medium heat, cook ground beef until browned. Drain excess fat.

2. Add chopped onion and 2 minced garlic cloves. Cook for 3–4 minutes until softened.

3. Season with salt and pepper, stir, and remove from heat. Let the mixture cool slightly.

4. Lay out tortillas and add 2–3 tbsp of beef mixture along one edge. Top with shredded cheese.

5. Roll each tortilla tightly, tucking in the ends.

6. Melt butter in a small saucepan and stir in remaining minced garlic.

7. Place rollups seam side down in a greased baking dish. Brush tops with garlic butter.

8. Bake at 375°F (190°C) for 15–20 minutes, until golden and crispy.

9. Optionally sprinkle chopped parsley on top and serve warm with dipping sauce.

Notes

Warm tortillas slightly before rolling to prevent tearing.

Let the meat mixture cool to avoid soggy tortillas.

Use freshly shredded cheese for best melting results.
