Ingredients

  • 1 lb (450g) ground chicken (preferably thighs)
  • 1/2 cup breadcrumbs (panko or regular)
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 3 cloves garlic, minced (divided)
  • 2 tbsp chopped parsley or chives (plus more for garnish)
  • Salt and pepper to taste
  • 1 tbsp olive oil (for frying)
  • 2 tbsp butter
  • 1/2 cup heavy cream

Instructions

  1. In a large bowl, combine ground chicken, breadcrumbs, Parmesan, 2 minced garlic cloves, egg, parsley, salt, and pepper.
  2. Mix gently until combined. Form into 16–20 small balls.
  3. Heat olive oil in a skillet over medium heat. Sear chicken balls in batches until browned on all sides (about 5–7 minutes). Set aside.
  4. In the same skillet, melt butter and add remaining garlic. Cook for 1 minute until fragrant.
  5. Pour in heavy cream and stir to combine.
  6. Return chicken balls to the pan. Cover and simmer for 7–10 minutes until fully cooked.
  7. Garnish with more herbs and serve hot.
