Ingredients

1 lb chicken breast, cut into bite-sized pieces

2 tablespoons Cajun seasoning

1 teaspoon salt

½ teaspoon black pepper

3 tablespoons unsalted butter

1 tablespoon olive oil

4 garlic cloves, minced

1½ cups heavy cream

1 cup freshly grated Parmesan cheese

12 oz twisted pasta (rotini, fusilli, or similar)

2 tablespoons chopped fresh parsley

½ cup reserved pasta water (optional)


Instructions

1. Bring a large pot of salted water to a boil and cook the twisted pasta until al dente. Reserve ½ cup of pasta water, then drain and set aside.

2. Season chicken pieces with Cajun seasoning, salt, and pepper.

3. Heat olive oil and 1 tablespoon of butter in a skillet over medium-high heat. Add chicken and sear until golden and cooked through, about 5–6 minutes. Remove and set aside.

4. In the same pan, reduce heat and add the remaining butter along with minced garlic. Sauté until fragrant, about 30–60 seconds.

5. Pour in heavy cream, stir in remaining Cajun seasoning if desired, and let it simmer for 2–3 minutes.

6. Add Parmesan cheese, stirring until melted and the sauce thickens. Use a splash of pasta water if needed to adjust consistency.

7. Toss the cooked pasta into the skillet and stir until coated in the sauce.

8. Add the cooked chicken bites back into the pan and mix well.

9. Finish with chopped parsley and extra Parmesan, if desired. Serve hot and enjoy.

Always use freshly grated Parmesan for the smoothest, creamiest Alfredo sauce.
