Ingredients
For the Sausage Bites:
- 1 lb (450g) sausage (Italian, smoked, or spicy), sliced into bite-sized pieces
- 1 tbsp olive oil
- 2 tbsp unsalted butter
- 3 cloves garlic, minced
- ½ tsp red pepper flakes (optional)
For the Pasta & Sauce:
- 12 oz (340g) pasta (shells, penne, or rigatoni)
- 2 tbsp unsalted butter
- 3 cloves garlic, minced
- 1 cup (240ml) heavy cream
- ½ cup (120ml) reserved pasta water
- 1 cup (100g) freshly grated Parmesan cheese
- ½ tsp black pepper
- ½ tsp salt (adjust to taste)
- 1 tsp Italian seasoning
- 2 tbsp chopped fresh parsley (for garnish)
Instructions
Step 1: Cook the Pasta
- Bring a large pot of salted water to a boil.
- Cook the pasta according to the package instructions until al dente.
- Reserve ½ cup of pasta water, then drain and set aside.
Step 2: Sear the Sausage Bites
- Heat 1 tbsp olive oil in a large skillet over medium-high heat.
- Add the sausage bites and cook for 3-4 minutes per side until browned.
- Remove the sausage from the pan and set aside.
Step 3: Make the Garlic Butter Sauce
- In the same skillet, melt 2 tbsp butter over medium heat.
- Add minced garlic and red pepper flakes, sauté for 30 seconds.
- Pour in the heavy cream, stirring to combine.
- Add black pepper, salt, and Italian seasoning, let simmer for 2-3 minutes.
Step 4: Create the Creamy Parmesan Sauce
- Reduce heat to low and stir in freshly grated Parmesan cheese.
- Slowly add reserved pasta water, stirring until smooth and creamy.
- Let the sauce thicken slightly for about 2 minutes.
Step 5: Combine Everything
- Add the cooked pasta to the skillet, tossing it in the sauce.
- Return the sausage bites and stir to coat evenly.
- Cook for another 2 minutes to blend flavors.
Step 6: Garnish and Serve
- Remove from heat and sprinkle with chopped parsley.
- Serve warm with extra Parmesan on top.
