Ingredients

For the Sausage Bites:

  • 1 lb (450g) sausage (Italian, smoked, or spicy), sliced into bite-sized pieces
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • 3 cloves garlic, minced
  • ½ tsp red pepper flakes (optional)

For the Pasta & Sauce:

  • 12 oz (340g) pasta (shells, penne, or rigatoni)
  • 2 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1 cup (240ml) heavy cream
  • ½ cup (120ml) reserved pasta water
  • 1 cup (100g) freshly grated Parmesan cheese
  • ½ tsp black pepper
  • ½ tsp salt (adjust to taste)
  • 1 tsp Italian seasoning
  • 2 tbsp chopped fresh parsley (for garnish)

Instructions

Step 1: Cook the Pasta

  1. Bring a large pot of salted water to a boil.
  2. Cook the pasta according to the package instructions until al dente.
  3. Reserve ½ cup of pasta water, then drain and set aside.

Step 2: Sear the Sausage Bites

  1. Heat 1 tbsp olive oil in a large skillet over medium-high heat.
  2. Add the sausage bites and cook for 3-4 minutes per side until browned.
  3. Remove the sausage from the pan and set aside.

Step 3: Make the Garlic Butter Sauce

  1. In the same skillet, melt 2 tbsp butter over medium heat.
  2. Add minced garlic and red pepper flakes, sauté for 30 seconds.
  3. Pour in the heavy cream, stirring to combine.
  4. Add black pepper, salt, and Italian seasoning, let simmer for 2-3 minutes.

Step 4: Create the Creamy Parmesan Sauce

  1. Reduce heat to low and stir in freshly grated Parmesan cheese.
  2. Slowly add reserved pasta water, stirring until smooth and creamy.
  3. Let the sauce thicken slightly for about 2 minutes.

Step 5: Combine Everything

  1. Add the cooked pasta to the skillet, tossing it in the sauce.
  2. Return the sausage bites and stir to coat evenly.
  3. Cook for another 2 minutes to blend flavors.

Step 6: Garnish and Serve

  1. Remove from heat and sprinkle with chopped parsley.
  2. Serve warm with extra Parmesan on top.
