Ingredients

For the Garlic Butter Steak Bites:

  • 1.5 lbs sirloin steak, cubed
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 4 tbsp unsalted butter
  • 4 garlic cloves, minced
  • 1 tsp fresh thyme
  • 1 tsp fresh rosemary, chopped
  • 1 tbsp chopped parsley (optional)
  • Red pepper flakes (optional)

For the Creamy Alfredo Tortellini:

  • 912 oz cheese tortellini
  • 2 tbsp unsalted butter
  • 2 garlic cloves, minced
  • 1 cup heavy cream
  • 1 cup Parmesan, grated
  • Salt and pepper to taste
  • Pinch of nutmeg (optional)
  • Chopped parsley, for garnish

Instructions

  1. Let steak come to room temperature, pat dry, and season with salt and pepper.
  2. Cook tortellini in salted boiling water according to package directions. Drain and set aside.
  3. Heat olive oil in a cast iron skillet over medium-high. Sear steak bites in batches for 1.5–2 minutes per side. Remove and set aside.
  4. Reduce heat. In the same pan, melt butter and sauté garlic, thyme, and rosemary until fragrant. Add steak back to the pan and toss. Garnish with parsley.
  5. In a saucepan, melt butter over medium heat. Add garlic and sauté briefly. Stir in cream and let simmer.
  6. Whisk in Parmesan gradually until melted and sauce thickens. Season with salt, pepper, and nutmeg.
  7. Fold tortellini into Alfredo sauce. Adjust consistency with pasta water if needed.
  8. Serve steak bites over creamy tortellini and garnish with parsley.
