Ingredients
For the Garlic Butter Steak Bites:
- 1.5 lbs sirloin steak, cubed
- Salt and pepper to taste
- 1 tbsp olive oil
- 4 tbsp unsalted butter
- 4 garlic cloves, minced
- 1 tsp fresh thyme
- 1 tsp fresh rosemary, chopped
- 1 tbsp chopped parsley (optional)
- Red pepper flakes (optional)
For the Creamy Alfredo Tortellini:
- 9–12 oz cheese tortellini
- 2 tbsp unsalted butter
- 2 garlic cloves, minced
- 1 cup heavy cream
- 1 cup Parmesan, grated
- Salt and pepper to taste
- Pinch of nutmeg (optional)
- Chopped parsley, for garnish
Instructions
- Let steak come to room temperature, pat dry, and season with salt and pepper.
- Cook tortellini in salted boiling water according to package directions. Drain and set aside.
- Heat olive oil in a cast iron skillet over medium-high. Sear steak bites in batches for 1.5–2 minutes per side. Remove and set aside.
- Reduce heat. In the same pan, melt butter and sauté garlic, thyme, and rosemary until fragrant. Add steak back to the pan and toss. Garnish with parsley.
- In a saucepan, melt butter over medium heat. Add garlic and sauté briefly. Stir in cream and let simmer.
- Whisk in Parmesan gradually until melted and sauce thickens. Season with salt, pepper, and nutmeg.
- Fold tortellini into Alfredo sauce. Adjust consistency with pasta water if needed.
- Serve steak bites over creamy tortellini and garnish with parsley.
