1 lb boneless skinless chicken thighs or breasts
3 cloves garlic, minced
1 cup panko breadcrumbs
½ cup grated Parmesan cheese
10 oz fettuccine or linguine pasta
1 cup heavy cream
3 oz cream cheese
2 teaspoons Cajun seasoning (or to taste)
3 cups baby spinach
1 cup marinated artichoke hearts, chopped
2 tablespoons butter
2 tablespoons olive oil
Salt and pepper to taste
Instructions
1. Cut the chicken into bite-sized pieces and season with salt, pepper, garlic powder, and Cajun seasoning. Dredge in panko breadcrumbs.
2. Heat olive oil in a large skillet over medium heat. Sear the chicken bites in batches, 3–4 minutes per side until golden and cooked through. Set aside.
3. Boil the pasta in salted water until al dente. Reserve ½ cup of the pasta water before draining.
4. In the same skillet, melt butter. Add minced garlic and sauté for 30 seconds until fragrant.
