Ingredients

4 boneless, skinless chicken breasts

3 cloves garlic, minced

2 tablespoons olive oil

1 tablespoon unsalted butter

1 teaspoon dried thyme

1 teaspoon dried rosemary

1/2 teaspoon dried oregano

Salt and freshly ground black pepper, to taste

Fresh parsley, chopped (for garnish)

2 lbs Yukon Gold or Russet potatoes, peeled and cubed

1/2 cup whole milk (warm)

1/4 cup unsalted butter

Salt, to taste

Freshly ground black pepper, to taste

1 lb baby carrots

2 tablespoons unsalted butter

2 tablespoons brown sugar

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup water

Fresh parsley, chopped (for garnish)

Instructions

1. Pat chicken breasts dry and season with garlic, thyme, rosemary, oregano, salt, and pepper.

2. Heat olive oil and butter in skillet; sear chicken for 5–6 minutes per side until golden and cooked through (165°F). Rest the chicken after cooking.

3. Place cubed potatoes in salted boiling water; cook 15–20 minutes until fork-tender. Drain and mash with warm milk, butter, salt, and pepper until creamy.

4. In a saucepan, combine carrots, butter, brown sugar, salt, pepper, and water. Simmer uncovered 15–20 minutes until carrots are tender and glaze thickens.

5. Plate mashed potatoes, top with chicken, arrange carrots on the side, drizzle with glaze and pan juices. Garnish with parsley.

Notes

Swap chicken breasts for thighs if you prefer a juicier, richer texture—just adjust cook time slightly.

For creamier potatoes, warm your milk and butter before mashing.

Let the chicken rest after cooking to retain maximum moisture and flavor.
