Ingredients
2 tbsp olive oil
4 garlic cloves, finely minced
1/2 tsp red pepper flakes
1/3 cup sun-dried tomatoes, chopped
1 tsp dried oregano
1/2 tsp smoked paprika
1 can (15 oz) butter beans, drained and rinsed
1/2 cup vegetable broth
1/2 cup heavy cream or full-fat coconut milk
2 cups baby spinach or chopped kale
Salt and freshly cracked black pepper, to taste
1 tbsp lemon juice
2 tbsp grated Parmesan or nutritional yeast
Fresh herbs for garnish
2–4 slices sourdough bread, toasted
Instructions
1. Heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes, sauté for 1–2 minutes until fragrant.
2. Stir in sun-dried tomatoes, oregano, and smoked paprika. Cook for another 1–2 minutes.
3. Add butter beans and stir to coat them in the aromatic mixture. Let them warm through for 2 minutes.
4. Pour in the vegetable broth and cream. Simmer for 4–5 minutes until sauce slightly thickens.
5. Add the spinach or kale, stir until wilted. Season with salt and pepper.
6. Stir in lemon juice and optional Parmesan or nutritional yeast. Taste and adjust seasoning.
7. Serve over toasted sourdough. Garnish with fresh herbs and more red pepper flakes if desired.
