These juicy mini meatloaves blend tender ground chicken with parmesan cheese and garlic for a lighter take on a comfort food classic. Individually portioned and packed with flavor, they’re easy to prepare, cook quickly, and reheat like a dream.
Ingredients
- 1 ½ lbs ground chicken
- ¾ cup grated parmesan cheese
- ½ cup breadcrumbs
- 1 large egg
- 4 cloves garlic, minced
- ½ small onion, grated or finely chopped
- 2 tablespoons chopped fresh parsley
- 1 teaspoon dried Italian seasoning
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons milk (optional)
- 2 tablespoons olive oil (for searing)
- Extra grated parmesan (for topping)
- Chopped parsley (for garnish)
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, combine chicken, parmesan, breadcrumbs, egg, garlic, onion, parsley, seasoning, salt, pepper, and milk.
- Mix gently until just combined.
- Form into 4–6 small loaves.
- Heat olive oil in an oven-safe skillet over medium-high heat.
- Sear meatloaves on both sides until golden (about 2–3 minutes per side).
- Transfer skillet to oven (or place loaves on a baking tray).
- Bake 15–20 minutes, until internal temperature reaches 165°F (74°C).
- In the last 5 minutes, top with extra parmesan and return to oven.
- Let rest 5 minutes before serving. Garnish with chopped parsley.
