Ingredients

9 lasagna noodles

1 ½ cups ricotta cheese

1 large egg

1 ½ cups cooked spinach, squeezed dry

½ teaspoon salt

¼ teaspoon black pepper

3 cups marinara sauce

2 cups shredded mozzarella cheese

½ cup grated parmesan cheese

6 fresh mozzarella balls (bocconcini or ciliegine size)

1 tablespoon black olive pieces or black sesame seeds


Instructions

1. Bring a large pot of salted water to a boil and cook lasagna noodles until al dente. Drain and lay flat on parchment paper.

2. In a bowl, mix ricotta cheese, egg, spinach, salt, and pepper until smooth.

3. Spread a thin layer of marinara sauce on the bottom of a baking dish. Add a layer of noodles, then spread ricotta mixture, sprinkle mozzarella and parmesan, and repeat the layers.

4. Finish with a layer of sauce and a generous topping of shredded mozzarella and parmesan.

5. Cover the dish with foil and bake at 375°F (190°C) for 25 minutes.

6. Remove foil and bake for an additional 15 minutes until bubbly and golden.

7. While baking, shape mozzarella balls into little ghosts and add black olive eyes.

8. Let the lasagna cool for 10 minutes, then place the mozzarella ghosts on top.

9. Slice and serve warm for a spooky and delicious dinner.

Notes

Make sure to fully squeeze out the spinach to avoid a watery lasagna.

Shape and decorate mozzarella ghosts just before serving to preserve their look.

Let the lasagna rest before cutting to get clean, layered slices.
