Ingredients
2 large boneless skinless chicken breasts
3 tablespoons olive oil
3 cloves garlic minced
3 tablespoons lemon juice
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup crumbled feta cheese
2 tablespoons chopped fresh parsley
Lemon wedges for serving
Instructions
1. In a bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper to make the marinade.
2. Place chicken breasts in a zip-top bag or shallow dish and pour marinade over them. Refrigerate for at least 30 minutes, up to 4 hours.
3. Heat a skillet or grill pan over medium-high heat. Remove chicken from marinade and cook for 5–6 minutes per side until golden and fully cooked.
4. Transfer cooked chicken to a plate. While hot, top with crumbled feta and fresh parsley.
5. Serve with lemon wedges and enjoy with your favorite sides.
Notes
Use block feta in brine for best texture and flavor.
Let chicken rest after cooking to retain its juices.
Fresh lemon juice and herbs make the biggest impact in flavor.
