Ingredients
- 1.5 lbs boneless, skinless chicken breasts or thighs, cubed
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 2 tsp red wine vinegar
- 3 garlic cloves, minced
- 2 tsp dried oregano
- 1 tsp dried thyme (optional)
- Salt to taste (~1 tsp)
- Black pepper to taste (~1/2 tsp)
- 1/4 tsp red pepper flakes (optional)

Instructions
- In a bowl, whisk together olive oil, lemon juice, vinegar, garlic, oregano, thyme, salt, pepper, and red pepper flakes.
- Add chicken cubes and toss to coat. Cover and marinate in the fridge for at least 2 hours (or overnight).
- Soak wooden skewers if using. Thread chicken onto skewers.
- Preheat grill or grill pan to medium-high. Lightly oil the surface.
- Grill chicken skewers for 10–12 minutes, turning to cook all sides evenly. Cook until internal temp reaches 165°F (74°C).
- Rest skewers for 3–5 minutes. Garnish with parsley and lemon.
- Serve with pita, tzatziki, and fresh veggies.
